Blackbird 4/13/12 lunch. Pt 1 Appetizers

Confit Octopus with Pea Porridge, Gunde's pickles, buttermilk and Dill Seed. I have never had Octopus melt in my mouth like this. No rough texture what so ever. The Buttermilk were in dehydrated chip form. Symphonic and Fantastic!

My fellow dining guest said this was very pure. It was simple and to the point.

  The Broccoli Soup with Sturgeon Belly, carrot jam and puffed wild rice. I love the color green: organic, living and plentiful. This soup was pure subtle flavors. In tandem, it was complimentary to the Octopus
